I have grown very fond of cupcakes as I've gotten older. There's so many ways to dress up a cupcake. They're like little tiny cakes. I don't know anyone who doesn't like a sweet cupcake.

If you are looking for something different, these certainly are that. The pink champagne cupcakes smell so good while baking in the oven.

Pink Champagne Cupcakes
Pink Champagne Cupcakes

1 box Betty Crocker SuperMoist white cake mix
1 1/4 cups champagne or sparkling wine
1/3 cup vegetable oil
3 egg whites
4 drops red food color
Champagne frosting
1/2 cup butter softened
4 cups powdered sugar
1/4 cup champagne or sparkling wine
1 teaspoon vanilla
4 drops red food color

1.Heat oven to 350 degrees F. (325 degrees F. for a dark or a nonstick pan). Place paper baking cups in each of the 24 regular-size muffin cups.
2. In large bowl, combine cake mix and 1 1/4 cups champagne or sparkling wine. Add oil, egg whites and food color. Beat with electric mixer on medium speed 2 minutes. Divide batter evenly among muffin cups.

3.Bake 17 to 22 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes, remove from pan to cooling rack. Cool completely, about 30 minutes. I took the full 22 minutes on my oven.
4. In a medium bowl, beat frosting ingredients with electric mixer on medium speed until smooth. Frost cupcakes. Garnish with pink sugar and pearls.

These cupcakes were simple to make. I may opt to leave off the Edible pink pearls next time. Just my personal preference.

The hugs are Hershey's. I topped each chocolate cupcake with a Hug!
Beat butter, sugar, eggs, and vanilla; set aside. Combine flour, cocoa, baking soda, baking powder and salt; add aternately with water to butter mixture. Fill paper lined muffin cups half full. Bake at 350 degrees F. for 20 minutes. Let cool. Frost with Chocolate Frosting. Top each with a chocolate drop, if desire. Makes 2 1/2 dozen.
You may want to make extra frosting.

The original recipe called 2-Kiss Cupcakes called for putting a Hug inside the middle of the cupcakes. I found the candy to remain hard and more obtrusive than being a creamy goodness surprise, so I left them out. You could try it.
